Season both sides of chicken thighs generously with salt and pepper and Italian herb seasoning mix (usually a combination of dried thyme, oregano and other herbs)
Add the chicken and thyme and cook until chicken is heated through. Season with salt and pepper. Serve immediately and top with chopped chives, if desired
Mix the soy mince with the broccoli rice and pour everything into an oven-proof dish. Heat a frying pan with oil and fry the onion and peppers for a while
