Butterscotch impossible pie

Ingredienser

  • 4 eggs
  • 230 g (1 cup) brown sugar, firmly packed
  • 125 g butter, melted, cooled
  • 100 g (2/3 cup) plain flour
  • 100 g (1 cup) desiccated coconut
  • 340 ml can evaporated milk
  • 300 ml thickened cream
  • Icing sugar, to serve
  • Double cream, to serve

Beskrivning

    Step 1
    Preheat oven to 180C/160C fan-forced.
    Grease a 4cm-deep, 26cm ceramic pie dish.
    Step 2
    Place eggs , sugar , butter , flour , coconut , evaporated milk and cream in a food processor and process until smooth (see note).
    Pour into prepared dish.
    Bake for 55 to 60 minutes or until set on top and slightly wobbly in the centre. Set aside to cool, then refrigerate for one hour to chill.
    Step 3
    Dust with icing sugar and dollop with cream.
    Serve.
