In a small bowl, whisk together mustard, syrup, and vinegar. Pour mustard mixture over chicken. Preheat oven to 425 degrees. Place chicken breasts into 9x13 lined baking dish. Bake for 30-40 minutes, or until meat thermometer reads 165 degrees. 4 boneless, skinless chicken breasts
Transfer to bowl with infused oil, season to taste with a little more salt and pepper, and tossto coat, shaking bowl roughly, until a thick layer of mashed potato–like paste has built up on thepotato chunks
