  • 2 medium sized carrots, sliced
  • small fennel bulb, finely chopped
  • 500 g cooked beans or chickpeas, or a mix (I used chickpeas and white beans)
  • 1 cup fresh spinach leaves
  • 1/2 tsp sea salt
  • black pepper to taste
  • a squeeze of lime to taste
  • chopped scallions and chives to serve
